Determined to mark a new chapter in Japanese food culture, É-Cothèque launches a learning platform which goes beyond the traditional demonstration training format to allow visitors to fully experience the latest trends, techniques and products in the fields of cuisine and confectionery. Live lectures by industry experts and discussions with participants followed by more than ten tastings' plates of patisseries, ice creams, desserts and beverages from the Valrhona Selection's exclusive range of products. The second edition of É-Cothèque welcomes two distinguished speakers:
Frédéric Bau, author of Gourmandise Raisonnée, and
Raphaël Haumont, a Doctor of Physical Chemistry and maître de conférences at Université Paris-Saclay, with sustainable and intelligent scientific approaches to food.
Together, they will delve into the future of gastronomy from both culinary and scientific perspectives, guided by three key pillars: Ecology, Economy, and Education. Through the intersection of science, creativity, and heritage, they will explore new dimensions of what “delicious” can mean in a changing world.
