VALRHONA presents『É-Cothèque』- Chefs’ Lead on Gastronomy Revolution – on July 18!

A totally new style experience proposed by l’Ecole Valrhona Tokyo for an inspirational, concise and informative encounter.

Determined to mark a new chapter in Japanese food culture, É-Cothèque launches a learning platform which goes beyond the traditional demonstration training format to allow visitors to fully experience the latest trends, techniques and products in the fields of cuisine and confectionery. Live lectures by industry experts and discussions with participants followed by more than ten tastings' plates of patisseries, viennoiseries, ice creams, desserts and beverages from the Valrhona Selection's exclusive range of products.  All the recipes will be browsable!

For the very first edition of 'É-Cothèque', special guests will be MOF (French Order of the Best Craftsman) Vincent Boué and Yusaku Shibata, Japan champion team representative of the Coupe du Monde de la Patisserie 2023. Excellent occasion of learning on ingredients, quality, techniques and markets trends from both French and Japanese cultures' point of view. Discover the chefs leads on revolutionizing gastronomy world through new ice-cream creation topics! Please enjoy a variety of tastings provided by l’École Valrhona Tokyo.
