French bistro "Loiseau de France" settles in Tokyo
Reflecting the vision of legendary French chef Bernard Loiseau, the Loiseau de France Bistro will open its doors in Tokyo on Sunday, June 2, 2024.
Bérangère Loiseau, CEO of the Bernard Loiseau Group, is delighted to have fulfilled Bernard Loiseau's ambition to return to the cosmopolitan city of Tokyo after three decades of hard work.
On Sunday, June 2, 2024, Tokyo will welcome the opening of Loiseau de France, a new gastronomic adventure inspired by the vision of the renowned French chef Bernard Loiseau. For Bérangère Loiseau, CEO of the group of the same name, this opening is an emotional achievement and a tribute to her father, thirty years after Bernard Loiseau enchanted Japan with his cuisine.
The Loiseau family's ties with Japan go back to the years 1992-1995, when Bernard Loiseau opened a replica of his restaurant "La Côte d'Or" on Rokko Island, Kobe. His cuisine, based on the purity of flavors and simplicity (low fat, low sugar and sauces deglazed with water), immediately captivated Japanese palates.
Loiseau de France will be located at the Institut Français du Japon (IFJ) in Tokyo, a vibrant cultural center managed by the French Embassy and dedicated to promoting the French language and culture. The IFJ, which will be transformed into a "French village" by architect Sou Fujimoto in 2021, surrounded by a lush garden, is the perfect setting for this new bistro.
The restaurant will have three distinct spaces:
- A 63-seat bistro dining room.
- A snack area with 20 seats and a terrace.
- A boutique dedicated to 100% Made in France products.
Blanche Loiseau, after a year of immersion in Japanese culinary culture and an enriching experience as a chef at "Loiseau du Temps" in Besançon, returns to Japan to lead Loiseau de France. She is joined by chef Hiroshi Yamaguchi, a former apprentice of Bernard Loiseau, and an international team of eight.
The restaurant's décor reflects the elegance of Loiseau's bistros, with fine materials, an oak wine cellar with a refined selection of wines, and a dessert cart. Belle Époque influences are evident in the fabrics and decorative elements, with a Raoul Dufy painting reimagined as Japanese panels dominating the space.
The bistro's menu is a true invitation to discover the terroirs of France through iconic dishes: poached eggs in red wine sauce, beef bourguignon Bernard Loiseau style, fish quenelle with Nantua sauce, and marinated mackerel fillet. A classic dessert, the Opéra, represents Paris in all its splendor. The culinary journey continues with a carefully curated selection of wines from French vineyards.
Behind a canvas of art, a music stage will allow the restaurant to host various events, reinforcing its role as an "embassy of French terroirs".
